Eyal Jagermann

From studying at Le Cordon Bleu, Eyal has gone on the co-found the award-winning London restaurant The Barbary and ANAN, a restaurant concept celebrating the culture of hummus eating in the Middle East.

Tomer Hauptman
Tomer's first kitchen job was as an assistant chocolatier to a Belgian trained chocolatier. He went on to work near the border of Lebanon and his cooking was influenced by a special mix of people from different backgrounds. Now he prefers rustic, hearty, authentic heritage food and has stepped away from the over-plated more towards food with emotion and history.
Mark Corbyn
Mark started cooking filipino food professionaly around 10 years agoand is now the chef and co-founder of the pop up Adobros. Mark loves the bold and unapologetic flavours of Filipino cuisine - the mix of salty, funky and sour flavours.
Rex De Guzman
Rex has worked in an AA rosette restaurant, hosted Filipino pop ups and was a finalist on Jamie Oliver's TV show The Great Cookbook Challenge. Filipino cuisine for a long time has been misunderstood and underrepresented so Rex is bringing attention to it with his restaurant Turo Turo.

What we'll be covering

Program Curriculum

Week 1: Semolina Cake

We'll start with a taste of vegan baking, baking without eggs and dairy taking inspiration from the desserts and the floral flavors of the Middle East.

Week 2: Sweetened Rice

By the end of this week you'll know how to use a bamboo steamer to make delicious desserts. You'll be experimenting with coconut and sticky rice to make some moreish sweet treats.

Week 3: Dairy Free Milk Pudding

This week you'll be experimenting with rose and spiced nut crumbs, creating a refreshing creamy dessert. Take influence from the seasons, trying out your own variations on a fruit coulis.

Week 4: Filipino Flan

Learn about the Filipino leche flan. You'll be making your own custard and caramel and baking using a water bath. You'll also be playing around with texture, finishing off your dish with coconut curds.

What's in the box?

In your starter kit you'll find ingredients picked and used by professional chefs. Included is everything you need to stock your store cupboard ready for the program (oils, vinegars, aromatics etc.) and upon sign up you'll be provided with a shopping list and recommended suppliers for the remaining fresh ingredients. Ingredients will arrive portioned with a little extra so you can adjust the flavor to your liking.
